You will start with your typical rice pudding, use the recipe you like the most (if you use a liter of milk and 150 grams of sugar per every 100 grams of rice, your pudding will always be creamy and well-cooked!) 

  • Once the rice pudding is done, let it cool.
  • Beat some egg yolks and add them to your cooled rice pudding mixture.
  • Whisk egg whites until fluffy, they should have a merengue-like consistency. 
  • Fold the whisked egg whites together with your yolk and rice preparation. 
  • Slide this rich creamy pudding into the oven and bake until perfectly golden.

To prepare this Hungarian rice cake you will need:

  • 1 litre of milk.
  • 100 grams of rice.
  • 150 grams of sugar.
  • 4 eggs.
  • Lemon zest, to taste.
  • Vanilla beans or vanilla extract, to taste.
  • Salt.

 Instructions

  1. Rinse your rice and drain it. It is paramount you clean the grains so as to remove the starch and dirt in them. Set it aside.
  2. Put the rice into a pot, add your milk and sugar and bring them to a boil.
  3. Cook over medium heat, stirring continuously until the rice is soft.
  4. Set this aside and let it cool.
  5. While this is being cooled down, preheat the oven to 180°C.

Now it is time to make the souffle:

  1. Separate the egg yolks from the whites.
  2. Whisk egg whites until you achieve a merengue-like consistency. Set this aside.
  3. Add vanilla beans or vanilla extract and the zest of a lemon to the egg yolks. Beat them with the remaining sugar. Add this mixture to the previously made and already cooled-down rice pudding.
  4. Fold in the egg whites gently, remember not to whisk them while they are being incorporated into your mixture, we are trying to achieve a perfect souffle!
  5. Pour the souffle mixture into a baking pan previously greased.
  6. Cook in the preheated oven for thirty to thirty-five minutes.

For the chocolate sauce: 

  • 1 tablespoon of cornstarch.
  • 2 tablespoons of cacao.
  • 2 tablespoons of muscovado sugar.
  • 500 milliliters of milk.

 Instructions

  1. Into a pot, add milk, cacao and muscovado sugar. Cook it for about a minute.
  2. Add the cornstarch and bring this mixture to a boil.
  3. Turn the heat down and let this simmer on low heat for 2-3 minutes; don´t forget to stir continuously so as to avoid lumps!

Take the rice cake out of the oven, serve with your chocolate sauce on top and be ready to delight your diners!
